Satay Chicken and Rice Noodles
Ingredients
- 400 g Chicken breast sliced
- 100 g Brown Onion sliced thinly
- 100 g Carrot sliced thinly
- 100 g Capsicum red sliced thinly
- 100 g Zucchini sliced thinly
- 80 g Broccoli sliced thinly
- 100 g Bok Choy
- 50 g Satay Paste
- 200 ml White Chicken Stock
- 200 ml Coconut Cream
- 4 Garlic Halved or cloves
- 10 g Ginger grated
Garnish
- 50 g Coriander chopped
- 50 g Shallots chopped
- 50 g Red Chilli sliced
Instructions
- In a hot pan with oil, saute the onion and carrot for 30 seconds
- Add chicken and fry for 1 minute
- Add the vegetables and fry for 30 seconds
- Add satay paste and wet ingredients, bring to the boil
- Add noodles and fry for 30 seconds
- Plate up into a bowl. Garnish with chilli and herbs, serve & enjoy 🙂
