Ingredients
  

  • 400 g Chicken breast sliced
  • 100 g Brown Onion sliced thinly
  • 100 g Carrot sliced thinly
  • 100 g Capsicum red sliced thinly
  • 100 g Zucchini sliced thinly
  • 80 g Broccoli sliced thinly
  • 100 g Bok Choy
  • 50 g Satay Paste
  • 200 ml White Chicken Stock
  • 200 ml Coconut Cream
  • 4 Garlic Halved or cloves
  • 10 g Ginger grated

Garnish

  • 50 g Coriander chopped
  • 50 g Shallots chopped
  • 50 g Red Chilli sliced

Instructions
 

  • In a hot pan with oil, saute the onion and carrot for 30 seconds
  • Add chicken and fry for 1 minute
  • Add the vegetables and fry for 30 seconds
  • Add satay paste and wet ingredients, bring to the boil
  • Add noodles and fry for 30 seconds
  • Plate up into a bowl. Garnish with chilli and herbs, serve & enjoy 🙂
