Ingredients
  

Broth Base

  • 2 L Clarified White Chicken Stock
  • 10 Cloves
  • 4 Coriander Root
  • 4 Star Anise
  • 4 Bay Leaf
  • 12 Peppercorns
  • 8 Cardamon
  • 50 g Ginger
  • 4 Garlic Cloves
  • 50 ml Fish Sauce
  • 100 g White Sugar

Broth Garnish

  • 100 g Eschallot Sliced
  • 100 g Carrot Julianne
  • 400 g Rice Noodles
  • 400 g Chicken Breast Sliced Thinly
  • 1 Chilli Medium Sliced Thinly
  • Coriander Leaves Chopped
  • Mint Leaves Chopped
  • Shallots Sliced Thinly
  • 200 g Bean Sprouts
  • 1 Lime Wedges

Instructions
 

  • Add all broth "base" ingredients into a pot. Bring to the boil than simmer for 10 minutes. Strain out all ingredients.
  • The the broth, add the eschallot & carrot and simmer for 1 minute. Add chicken and simmer for a further 1 minute. Add noodles and simmer for a further 1 minute.
  • Divide the broth between equal quantities. Garnish with herbs, chilli, bean sprouts and a squeeze of lime
