Chicken Bhuna, Poppadom’s & Raita


Chicken Bhuna
1 Large Eschallot, brunoise
1 garlic clove, chopped
10g ginger, chopped
½ long red chilli, deseeded and brunoise
Pinch turmeric powder
Pinch chilli powder
Pinch ground cumin
Pinch ground coriander
Pinch garam masala
1 Tomato, chopped
10ml lemon juice
2 chicken thighs
Vegetable oil for cooking
Salt & Pepper

100g Natural Greek Yoghurt
1 Tomato, Skinless, deseeded, brunoise
1 Cucumber, Skinless, brunoise
1 Eschallot, brunoise
1 Lemon Zest

100g chickpeas flour
Pinch salt
40ml water
20ml vegetable oil

Micro Coriander


Mix ingredient to form a dough. Take ½ of the pastry at a time and roll out to 2-3mm thick. Cut the pastry to size. Deep fry the pastry until golden. Once cooked, gently put on paper towel and season.

Mix all ingredient together.

Sauté Eschallot, Garlic, ginger and chilli until Eschallot is golden. Add Spices and cook out for 1 minute. Add Tomato & Lemon juice cook for another 2 minutes. Add Chicken, covered completely by the sauce. Braise the chicken until cooked approx 20 minutes until the chicken falls apart.
